Wrought Iron

I've managed to find some iron. I know that the chance for an ore becoming a bar is determined when it's mined. What about the chances of bars of cast iron becoming wrought iron? Is that determined when it's smelted into cast or are each of the chances calculated when it happens at the finery forge? I've been using my full nature alt to smelt my ore while I mine on my other character. I'd like to know this before I go any further with it.
