well, basically my question is this: does milking the cow after having a new young (calf) affects the growth of the young?

and if so...so when is the best time to milk it?

It won't bother it. The calf will drain milk from the mother or nearby barrels of milk whenever it's hungry. Unless, by some form of perverse luck, you manage to milk your cow exactly before your calf can drink for a few days in a row and there are no other sources of milk nearby then your calf will be unaffected.
