Why cant i take more than one peace of clay from each river/clay-area every few hours?

Because they don't have clay in it ... you need to search more

If a node isn't nearby, you will only be able to take a single piece of clay of 10q. Sometimes you can find a node and you will get nothing but 10q. Keep searching in the general area and the quality might rise. Sort of like a game of hot and cold.
