As a note, you don't harvest grape seeds, you harvest grapes. You then have to eat or press them (in a winepress) to get seeds. Drying grapes for raisins destroys the seed.
Personally, if I find a farm that isn't claimed, I'll take what I need for seeds and replant. If the plot is abandoned, nobody is going to care and there'll be crops there for the next newbie that comes around. If it's being actively farmed, it might annoy the farmer, but there's at least crops there regrowing so they haven't lost too much.
