Chicks and chickens won't starve to death if you leave them in your inventory, right?

Why would you think that? If you need to double check, that means you checked somewhere first. Was it the wiki at http://ringofbrodgar.com/wiki/Haven_and_Hearth_Wiki? If not, then you might have gotten wrong information!
Yes, chickens all starve while in your inventory. They can't eat there. You must store them in a chicken coop that has fodder in it so they won't starve.
