Check the Combat Guide by Dataslycer stickied in this forum. Best guide for combat and fighting the various animals.

"Twitching" means just that. When the animal is trying to reach you, it will occasionally appear to twitch because it's trying to figure out how to reach you. This is due to internal server mechanics. (Note: you should never actually see that twitch.) The theory goes, if you time your shots to hit it when it twitches, it won't run away. I can't seem to time it right.

Actually, you might have gotten the animals more for the fact that weaker characters will hit with less damage than stronger toons, and thus the animal will not run. The better perception and marksman you have, the higher the chance of the animal running.

Marksmanship has nothing to do with damage.

No, but it has everything to do with aim speed and dps. Dps is what breaks the critter's will and makes them run.
