The mining skill is all that's really needed. Assuming you want to use bars from the ore you make, increasing the incremental skill "Smithing" is ideal also.
I also strongly advise you raise your nature/industry slider to full industry, as it will grant you a 20% chance that ores mined will turn into bars as opposed to 10% at neutral.

Upon purchasing the mining skill, the "mine" action will appear in the adventure menu, when you chose to use this ability your cursor will change to a pickaxe. Left click on an unmined tile in a cave/mine, you will either get ore or stone, this is based on whether or not there is an ore deposit there.
There are 3 types of nodes relevant to mining underground:
1. Ore deposits: if you mine in an ore deposit, you will receive that type of ore as opposed to stone when no deposit is present. You can find out the location of ore deposits by prospecting with rustroot on the layer above the layer you want to mine on.
2. Quality node: if you mine within a quality node, the quality of stone/ores received will be above the base quality for that layer (Q10, 20, 30, 40 and 50 for layers 1, 2, 3, 4 and 5 respectively)
3. Hardness node: if you mine within a hardness node, the amount of "mining ability" (see the mining wiki page) necessary will be above that of the base for the layer. As you go deeper, the base hardness levels increase.
These 3 types of nodes can overlap and have no relevancy to each other in location.
For the actual mining, there are 2 common ways of mining:
The first is mining under mine supports. Mine supports will stop cave-ins from occurring in a radius around them (this is best for making sure you miss absolutely 0 ore).
The second way of mining is snake mining, which is when certain methods are used to avoid cave-ins while not using supports. The key principal behind snake mining is that you a cave-in will not occur if you don't mine more than 3 tiles in any given direction. You will also need to create a mine hole if you don't plan on mining through a cave, rustroot extract helps in locating ore deposits so that is also something to look for.
