I have the grist, the hops, the cauldron, no wort recipe....

you've got beermaking skill i assume, right (well, if you've made grist then you must have but ...)?
each needed item was made by you?

You need to discover all that shit (picking the hops, taking the germed wheat from the H.Table, taking the malted wheat from the kiln) with the char who is supposed to be making the wort. You can't just have an alt leave it all in a box for your beermaker and expect him to discover the recipes that way. The beermaker himself has to go through the entire process.
