Cheese making

So I started making cheese and got the celler chedder down. Then I wanted to try and make that into cave chedder - so I put in it a cave and left it there until the bar got to 100% - but when i toke it out it was gouda. Then I tryed again - keeping a closer eye on it and taking it out the minut it was 100% - but still i got gouda. Then I looked at ROBwiki again and read the discusion - where I found that someone ells had this problem. So:
1. is the Wiki wrong? Then making cave chedder is not 1. celler -> 2. cave?
2. are cheese a change production? Meaning it only gives good results sometimes?

Cave cheddar is bugged and produces Gouda.
