What should i look for.

You may want to look at the wiki to see what FEP stat is given when eaten roasted or as sausages.
Fox foods are generally int and possibly agi as hybrid sausages
Boars generally give str in general as well as a few other stats.
Deer give agi with a few other stats as sausages and perc roasted.
Bears give str.
Mouflons give cha roasted or perc as sausage
Aurochsen give con.

Animals has a chance to run when they are struck for more than 10% of their total HP. The exception is is Aurochsen and Mouflons which never run.

also can you travel to your hearth fire while carrying something?

And yes you can hearth back while carrying something over your head (assuming you want to return with your boat).
