Have you thought about hunting from a boat? That is the best way to hunt animals in the start for newer players. You can quickly cover a lot of space searching from a boat and 100% safe from the animals while sitting out of reach from the shore in your boat. Also you can kill animals from behind your palisade or brickwall. But you can also kill animals that is trapped or beeing trapped yourself. Foxes you can trap in a normal fence, but boars/bears/deers will break the fence. Deers can be trapped using boulders from a cellar, while boars/bears can be killed after having trapped yourself inside boulders. Using boulders to trap yourself/animals is a very slow process and can only be pulled off within a reasonable amount of time if you have a village idol/enough wine to keep you running for a while / hunter with enough agility to travel a good distance between hf/village idol / a good number of boulders lying arround close to the idol / an alt or friend assisting you. So you locate a bear/deers (probably not worth it doing this for a boar) If you locate deers, proceed to trap them all using sign posts. If bear, keep a safe distance, but dont dont let it run away from you. Then you get your alt/friend there with a beautiful dream and a glass of wine (to make sure he wont have to run back to the village because he had too much travel weariness). Then make a hf close to the animal and start moving boulders from your base (use a boat if you dont have much wine) Press shift while placing the boulders and remember that you can use a tree/stone as part of the boulder-wall.

If the bear has wandered off, you attack it using the alt. Use a fresh alt with hunting/unarmed (unarmed requires more lp, but no sling/bow) Then agress the bear from as far away as you can, and run straight to your boulder-camp where your hunter is hiding inside. (There is a high chance that you will die with your alt from this) If the bear doesnt kill your alt, log it off as soon as he has de aggroes you, even though you are still ko'd) Then shoot the animal

Shoot the animals right after they flinch, if you do it correctly they will not flee.
Kiting animals to the water/brickwall or palisade can be done easily with fresh alts with unarmed.
If you get knocked out by a bear or a boar and it doesnt kill you but stops attacking you. Log out of the game at once, and choose to log back in again at your hearth fire. If the bear/boar doesnt run away from you and you stay logged in, it will start attacking you again as soon as the knockout is over, even if you are still lying still on the ground.
You only need 20-30 mm to kill animals using eighter of said strategies, though it takes a little longer to do so. Get a high q bow/sling from a trader, they are cheap enough and helps a lot with damage. Check Panio Bazaar.
