You may have hit a very small node, or simply a node that someone else has already gotten to. What happens is that when you collect clay, it digs towards a concentrated spot somewhere in the area. Through digging in different areas, you can deduce where the highest concentration of the resource is, which is also the highest quality of that node. Note that you can dig at the edge of the node which depending on the size of the node, can become as low as Q10. Digging from this edge of the node will increase the longevity of the node, and is the preferred method of digging to acquire bricks for structures like walls, that don't depend on the quality of the brick used. Digging at the concentrated source will deplete the area much more quickly.

Try digging around. This node may just be a dud and very small. Give it a few days and it can replenish a bit.

As Vaku said. Here is the explanation for nodes that I have. =)

There are invisible resource allocators known as 'nodes' in the world. Not every location has a node and nodes that do exist are circular/ovular in shape. Nodes determine how much of a resource is at a location and at what quality. Nodes produce the highest qualities at the center of the node. If a mudflat or shallow shoreline does not have a clay node, then digging it will produce only 1 piece of quality 10 clay or no clay at all. Nodes deplete as they are used and produce lower and lower quality products. Nodes will heal in time if not used but will never exceed their original maximum quality. Some resources do not need a node to be used, such as water, stone, sand, and soil. Without a node you cannot dig for clay, fish for fish, or mine for metal ore though.

Yes, sometimes when you dig you get one peice and then no more.

When I started I got very confused by this and proceded to dig every single tile of the mudflat I was on, getting more and more annoyed as I got very little further clay.

Just move 30-50 tiles away from where you were digging, and then dig on a shallow water, or mudflat tile again. Repeat until your char doesn't stop digging after the first try and you've found a node.
