Is there a way to know how a hearthling died?

There is no system alert or anything of the such that will tell you. If you have a high enough Perception * Exploration then you can use tracking to give you ideas. Lack of scents and a body in the wilderness probably means they were eaten by an animal. If there are scents or vandalism, battery, and murder then it was a raid by other players. If a death was too long ago then there will be no evidence.

If it was your own character and you died in your sleep, then 2 things could have happened.
1) You logged off without a bed and in the 15 seconds while you're kept online something killed you.
2) You have been committing crimes and someone used your scents to track you.

If you were online and never saw how you died then it was probably an arrow from a sniper.

Actually, beds don't instantly log you off. Same as logging off normally.
