When you start filling up the overstuffed bar, you become unable to eat anything that would take you over 100% overstuffed.
The option to eat it still appears, but attempting to do so does nothing.

No. You cannot die from overeating. You can go as high as 110% hunger bar and then you simply cannot eat more. Anything after 100% reduces your movement speed to crawl and you cannot change movement speed until you reduce your hunger to 100% or lower again.

If you starve to 0% then you will die pretty quickly though

It's been a looong time since I've gotten to starving. Don't you start losing HHP when you get there? Slowly at first and then faster the hungrier you get?

You lose hhp 1 by 1 when you're below 50%

When I got to 0% I started losing hhp 35 every second or so. I didn't want to hang around and test it so I ate a pie and stopped it, with about 50hhp left.
