Combat is a delicate creature and there is no easy strategy to win, especially when you're the underdog. A smart fighter with lots of experience can beat someone with substantially higher stats/skills than themselves. Unfortunately, you're brand new to fighting, so you've still got the fear of death in you. As long as you're afraid and you panic in combat, you'll be at a disadvantage. Likewise, you're new to combat in video games in general it sounds, which means you'll be at an even greater curve.
Kiting someone refers to attacking while moving. Call down the thunder is useful for this because it has range and you can use it while moving. CD is cooldown.
My advice would be to spar with your brother so that both of you can explore combat. Get used to the different moves, experiment with what works well with everything else, and pick fights with animals once you feel like you're comfortable with that. You'll lose, of course. The animals will tear you apart and probably kill you. Plan around that and figure out exit strategies. Always look for a way to book it and always plan for what happens if the enemy tries to run.
If your exit strategy fails and you lose combat? Well, you'll die and have to start over again. If you try to practice without risk, you'll get nowhere and learn nothing.
