The red bar on the left is the food the cow eats each period of time. If it has eaten recently it is full, if not it goes lowering until the animal eats again. I think they eat 3 times per real day, that is 3 H&H days, but this Im not sure.
The pink bar on the right lowers when the cow has starved and never ever recovers. Once it starved the outcome of the by products lowers the quality in the same proportion that the bar lowered.
If the milk comes out lower than the number on the info gump either it starved or you are capping the milk with the stats or skills of the char you use to milk it, now I dont remember if it is DEX, cooking or which one.
Also when cows eat lower quality food than their stats they lower their numbers, but this takes 2 days to show in the info gump, so maybe you gave them lower Q than the food they had before and you looked at the quality in that 2 day period. If the food container gets empty the cows eat from the grass that is quality 10, so the quality of the food eaten in that period of time is the average between the quality of the food your provided and the grass, so often we are not able to explain why the outcome is lower and it is this.
The numbers are the quality of the by products. Acording to what outcome you want to get you breed them choosing one or the other. They have caps too, I think survival and other stats and skills of the butchering toon, same as the milk but different stats and skills, I dont recall which are they.
I believe we need to breed the best milk quality cow with the best breeding quality bull to get the better outcome and then feed the babies with the best quality milk.
As the baby cows drink milk from barrels it is easy, just has to be placed in the same radius than a fooder.
Babies drink from any cow, not just their mother, so we can also place the best milk quality cow in the same pen with the babies we select the be the breeders. This (not the barrels) works for sheep and pigs too.
