There are theoretically a finite number of gold nodes, yes. No one has a clue what the density of gold nodes spawns on average per supergrid is. I believe they tend to be more common on deeper levels but I have no numbers to back this up. Chickens can also lay golden eggs rarely which can be used as gold nuggets.
No they have not all been discovered, there are still lots of metal nodes of all kinds out there.
