Odds are, unless it's a really large mud flat, digging once at about the center will usually give you an indicator of a node. There's a chance the node is centered off the flat and only catches the edges, but for other than digging for wall bricks, you're not going to want to use that clay for anything. Larger flats should be checked at top, bottom, left, and right.
