Advanced cheesmaking questions

-I'm going to refer to leaving a tray in a rack until the contents change as a "transformation." ie curds in a tray would turn into cellar cheddar after one transformation.

What is the relationship between transformation times?
Is it the same for everything?
Same for each level of transformations (ie curd to cellar cheddar is the same as curd to mothzarella(first tier), and brodgar blue to jorb is the same as harmesan to sunlit stilton(third tier)?)
no method to the madness?

I would have thought each transformation took the same amount of time. Although I'm not completely positive, It seems as if my curd->cellar cheddar is significantly faster than my harmesan->sunlit stilton.

Does cooking effect cheese making in any way other than making renet? If so when does this check happen (I'd assume it's filling the tray or cutting it up but who knows)

I'm not 100% sure, but I think it's different for every transformation.

And cooking only matters for rennet.

That's obnoxious. Makes it much harder to make multiple types of cheese simultaneously on the same racks.

Well I've been making Midnight blue and no the times are not all the same, matter of fact it seems each stage took longer than the last. To go from celler ceddar > Brodgar blue > Jorbanzola > Midnight Blue took me almost 2 weeks REAL time. So as far as I can tell each transformation of each type at each stage is different by far.

yah, that's correct. if your last transformation is going insanely fast, its gonna turn into gouda.
