How do I build the trenches I see all over, and what exact purpose do they serve? I have looked around and see no info on this, and no option in game that allows me to dig trenches.

you don't. those are actually supposed to be cliffs.

Thank you, i thought these were built to help with fortification.

Do these cliffs have attributes to help with mining? I have seen quite a few mines going into cliffsides.

The mines you speak of are actually caves, which offer cavebulbs and can be searched for mines. Mines can be found in and out of caves.
