Except they are not cows. They are aurochs, the wild form of cows. To get cows you have to have animal domestication and tame them....
Many threads are devoted to the how to of turning an angry herd of aurochs into a placid herd of cows. if you really want a cow for milk and that, your best bet may be to purchase one.
If you want one for a "dried cow hide" be aware that any four square sized hide will do, such as deer, auroch and boar.
