You can't avoid it healing itself.
However, if there's more deer, they will heal each other. You can lure the other deer away, so the deer only heals itself. Still, you'll need to do more damage than it heals itself to kill it.

You could try group hunting. Normally adding a couple of low level marksmen to your hunt just makes the animal in the enclosure twitch more and so be harder to hit, but in the case of a deer it might be worth it. I believe they heal 100 hp every time they make that whirling blue and white spell thing, so you might have to be doing more than 100 points of damage each turn. Also, if a couple of heavily armored volunteers willing to lose hit points try meleeing the deer while your slingers whale away at it, it might attack them instead of healing itself.

You could also try hunting deer in the most populated area available. The lower the level the easier they should be to kill. Try waiting for deer between two closely spaced villages.

I say all this knowing perfectly well that you are probably a solo hunter in the Deep Dark Woods and my suggestions are totally useless.

My damn ancestors want my hermit to supply them with deer antlers so I can empathize.

Only the lvl X deers heal for all, the other dears heal for more than lvl*10

Deer healing seems to require a certain cooldown period (after two consecutive healings, I think). You need to deal damage faster than it can heal it. It can be tricky with a bunch of deer healing each other, so you want to take one out of the herd if you can (pen stragglers one by one). Then you need better damage, which can be achieved by getting a better sling and raising your perception. Or you can increase your marksmanship to improve your fire rate (you may still need to upgrade your sling to get it's benefit), which also means more damage. The good news is that deer will use healing even when they're only slightly damaged, so less of your damage will be negated.

killed 5 deers so far, thanks for help and advise. i guess i had my problems with several deers near the one i hunted. they got a quite big distance....

by the way, does anyone know if the deer healing recovers both their HHP and SHP?

It seems to me that deer only have a certain amount of an ability to heal with a certian regen rate I haven't timed. Generally if you just keep damaging them eventually they will stop healing themselves. As said before, spllit the herd if it still causes you difficulty.
