I was just wondering if you had to unequip items such as your fishing pole or bone saw to fight stuff using this skill.

and what skill level do you need before you can melee things to death

I have used fist strike with equipped items with no problems.
I am at level 9 melee and I can one hit bunnies and chickens.

You can one hit bunnies and chickens without any problems if you have unarmed combat. No stats needed.
Dont know about levels needed to kill a fox or boar effectively, noone seems to do.

I do know that there is an unarmed attack "Strangle" that requires both hands be empty. But it can only be used on other players... I think...

you can strangle anything that moves unless they changed it recently
