Can someone explain how this works? eg. if im fighting an animal and i move right when they are swinging at me my defence will go to 0 and they will deal damage.

Is there a reason for this? If i were to use unarmed instead of melee would this still occur?

Yes. This is the scenario of what I call being caught flatfooted. Even ants can do this to someone with 100 combat skills.
If you keep focusing on the shadow behind, you will not see the light in front of you.

so it even will reduce teh defence of someone using dodge?

Another fail of the combat system. You're expected in theory to be able to run from a stronger opponent. In practice he can just one hit you if you run.
