What are the minimum skills/armor/strength to kill a bear with melee combat? I don't wanna hear anything about exploits or blocking yourself in with signs, just man vs bear.

Depends what lvl bear. I took a lvl4 a while back with 75 melee without taking a hit.

Can you kill level X bears?

No I can't... yet, but it can be done with high enough stats yes.

It's possible to win against a lvl 6 bear with a bit of effort at 100 melee. However if it goes to level 8 bears, you will need a around 120 unarmed and 100 melee or simply 130 melee so it won't mess up your defense with the bite move so much. I am predicting that you can take down a Level X bear at 150 melee or 120 melee/120 unarmed with cunning. The trick to fighting the bear is getting combat advantage so it does less to your defense meter and bears do not try to get combat advantage as boars, deers, and aurochs do (aside from hitting you of course). If you note your defense is dipping dangerously low, use the Flex/Oaken Stance combo to fill it up and hopefully it will use the maul move instead of the bite.

I've handily beaten a VII bear when I had just 100 melee. I think I could even beat an X bear with 100 melee, but I wouldn't bet any money on it.

20-something, don't really remember. Doesn't matter either way, since I only use shield and skuld my way to full advantage before striking.
