Why is my food burning?

I am using the exact fuel amount needed for RoB dough and Blueberry Pie, and all of it burns. 3 branches.

Does putting the dough in the oven before you light it affect it? Seemingly it does.

There is a bug with ovens - if dough lies there for some time the game thinks it's baking already, so if you'll add the needed amount of branches the food may burn. In short, don't let your doughs just lie in the oven.

Or, do let your dough lie in the oven, and then use a single branch to cook it all. You can't convert from uncooked dough to ashes in a single tick, so this is perfectly safe unless loftar fixes it. (He hasn't fixed it since May/June 2009 so take that into consideration.)

I didn't know about the 'lie in the oven' trick, that's pretty cool.

What I would always do is fuel the oven first (3 branches for Robs, bread etc) and then load the dough and light

Simply placing the dough in before the fuel is not enough to trigger this bug, though. You either have incorrect information about how much fuel is required for those recipes, or you are actually leaving the dough sitting in the oven for an extended period of time.

What I usually do with new recipes is load 2 fuel units, let it cook, and then see if it requires more. Then I load 1 unit and cook again, repeat until done. No risk of burning that way and you learn exactly how many branches is needed. Remember, the wiki is not perfect.

To clear this up for the op, the recipes mentioned by him do NOT require 2 branches, they require 3. If you just do it right and put the branches in first, then the dough and light directly after you have placed them nothing will happen. They will be ready after the third branch has been burned.
The alternative is to abuse the bug and leave the dough in the oven for the first 2 ticks (dunno the exact time, I just always wait 20 minutes, but it might work sooner than that), then place 1 branch and burn that. The dough will also be ready then.

I'm 95% sure that a 'tick' is 6 minutes, and each unit of fuel burns for a tick. So 18 minutes should be sufficient.

20 is a nicer number though.
