Hunting with Melee

Okay, I have a Q11 Bronze Sword, and some bronze armor. What Melee stat should I have before hunting even say lvl 5 animals? And what kinda techniques should I use?

For level V, 20-30 should be enough for a fox. 50-60 against a boars and deers though I recommend getting sufficient unarmed stat as they try to get combat advantage during battle and using the maneuver makes it easier to deal with them. Bears you'll probably will fight at 100 and are actually less aggravating at high melee skill believe it or not.

So pump UA to about 50 or so and then just work on melee?

Well if you use the maneuvers correctly, 50 or more would help. Otherwise stick with melee as incorrect usage may mess you up.

Meh, you can do just fine without any fancy manoeuvres. If you're going melee, go full melee. Better to have 100 in melee than 50 in both melee and UA.

I haven't worked out the math but the LP for the 2 level 50s doesn't get anyway near to 100.

Shush, that's not the point
The point is, the guy who puts all his points in melee is going to cut straight through your defence and get advantage for doing damage to you, and once he starts getting advantage it's all downhill from there.
