I have something like this:
3 chickens , a row below for eggs, another 3 chickens, another row for eggs. This fills a square of 6X6. In the remaining space a rooster and 6 chicks to grow
I the rows for eggs I usually keep only one egg for each chicken to develop to a chick and an empty space for new eggs.
This is good if you can check and select every day

If anyone has found a way to fit even more hens in the coop, I'd love to hear it.

that's only good if you have another coop or two for growing chicks, in which case you might as well just have one coop with 8 chickens =v

Speaking of which, what's the best way to arrange chicks, cause I've had 2 different types of arrangements and I swear I'm losing some of them somewhere.

That's what I use, just 8 birds per coop in 2 coops. Rooster and 7 hens with 4 spaces below each. Keeps it all simple.

I have 5 hen coops and 2 coops for raising chicks, and it works out perfectly. And yes, I throw away 90% of their products :(

Anyway, I just fill the coop's top half with chicks, works fine.
