How do I hunt animals with the bow?

First of all: use the sling, you`re probably more successful.

Then read this

generally you have 3 options...
1: Get a really powerful ranger bow and 1-shot the enemies.
2: cage your enemies, then shoot until they die. for bears you'll need to shoot from a boat so they don't break the cage, but still have the cage so they can't run.
3: Shoot them until they try to run away, then immediately break combat and follow until they stop running. Repeat until dead. You lose a lot of LP this way, but it gets the job done.
