Making Chests

I note that the local exchange rate assumes trading chests of other things for metal. How are you supposed to get metal to make the chests in the first place? Or is chest a unit of measure?

Mainly it's unit of measure (36 units of something).

So in case you don't have access to metal so far your trade partner will surely supply chests to fill the stuff in on the first trade (and give you part of the payment in nuggets so you can make chests).

You can just do some one chest trades and use coffers now until you get a hold of some chests. It's not too bad. My first trade pre-chest was for 25 chantrelles, which I stuffed into two straw baskets.
