how do i know when my crops are done

i know that most crops have 4 stages, but is there a site or something that has a picture for all the stages of all the plants, i know the H&H wiki has the pics for a few of them, but not all, and seeing as i don't know any by heart ... it would be a nice resource to have

As far as I know there is no complete series of pictures for all crops. You will learn how they look like when ready very quick, so don't worry. When in doubt just try if you can harvest them. If you can't, they are not done yet.

Essentially for most cases as soon as the game GIVES you the option to harvest the plant its ready with no further development (if its not ready you aren't allowed to harvest), there are exceptions. Those are Carrots/Hemp/Pumpkins.
Carrots will allow you to harvest them prematurely, you want to wait till they are very thick which happens after they go through the white seeding phase, if your not eating them harvesting them during seeding phase is just as good.
Hemp is harvest able when it blooms orange and you will get a hemp bud instead of seed and plant material, so wait for it to pass if you want the seed.
Pumpkins are a mystery to me, I've left one up for two full RL weeks and it repeatedly changed graphic and size daily. I just harvest them when they are at their largest and have a little curl to the left of their stem.

That sounds odd. They work just as most other crops for me.

alright, so on the note of carrots, if i harvest them at there last phase, will i get seeds and fruit or just fruit (and i know carrots aren't fruits, it's a figure of speech)

You will get just the carrot without any seeds, but you can replant carrots.
