How much melee do I need to kill a LV X fox with a stone axe?

50 on the same side. 40 if you know what you are doing. However you probably won't kill the fox as it will run away from you if you deal too much damage.
If you keep focusing on the shadow behind, you will not see the light in front of you.

Being able to kill an enemy in melee depends more on your ability to not take damage, than your ability to deal it. So long as you can keep from having your defense bar compromised, you can kill it as leisurely as you want to. With 40ish melee I was able to take on level 4-5 boars fine, and level 8 or 9 foxes. So 50 should be sufficient for level 10 foxes.
