Long story short, you ate a food that gave you some charisma FEPs and it picked that stat to improve when your bar maxed out.
Long story long, every time you eat a food you will gain FEPs if that food has any to give. (Plain bread and food straight from trees don't give any.) These FEPs are added to that bar under your attributes. When the bar fills up, it'll randomly pick a stat to increase out of all the different types of FEP you filled the bar with and the bar empties. It is more likely to pick the stats which take up the majority of the bar. All overflow is ignored and discarded.
After each stat point gain, the bar requires more FEPs to fill than the last time, but this bar can be reduced (albeit being returned to the natural length progression after a stat gain) if you eat a food that is different from the previous food you ate. Eating low quality carrots (or maybe whatever you just dug up from an anthill) between foods can help maximise this effect with the least amount of FEP gain, allowing you to focus on one kind of stat if you have enough of right kinds of food.
Generally you don't want to end up increasing only a few kinds of stats all the time since later on you'll have one heck of a time trying to get stat increases for the other areas.
