Grass

If you plant grass, and then put a crop on it, will the growth speed decrease, or quality decrease or something. Also does grass never dissapear on its own? thanks in advance.

Grass can be eaten by farm animals. It will appear to turn to mud, though it isn't functionally.

I don't think crops can be planted on grass.

Well I've seen crops on grass by some random farmers, I'm guessing they planted the grass after the crops

That's possible. It's also possible to pave areas that have crops growing on them.

What you have seen is, and this is what I do, I plant grass, then plow the grass, then plant my crops. When the plowed tile disappears it becomes a grass tile again. I do this because you cannot plow a mudflat, but you can plant grass on it, then plow said grass tile and plant your crops which allows you to live on a mudflat and not have to worry about being near forest tiles for farming.
