Harvest mod

I am wondering if there is or if there could be a mod that shows how much time until a crop can be harvested.

Not unless the server sends some time-stamp info for 'ALL' the single plants that are inside the characters visible range.
Considering your not lagged to dead when you walk trough large crop fields ... Its save so assume its not doing that.
The current best alternative is to use the Timer's in the Ender client. Set them to the right growth time for a particular crop(+/-Beehive). And start it when you start planting a section.
