Since it seems you want to implement permanent mounts, unlike how they work now, let me make a suggestion.

You can tame horses the same way you tame other animals. When tamed, you can ride the horse (perhaps with sadle?) which will work pretty much like it does now (though hopefully without the current problems with mounted combat). The horse has limited stamina like the current ones have, but it will not throw you off when it runs out. Instead it will be reduced to the crawl speed, and it will slowly recover its stamina. The stamina recovery can be quite slow, it could even take as much as 4 hours for it to recover fully, but if thats the case it should have way more stamina than it does right now.

This way, tamed horses would be a more reliable mount than the wild ones, but not so good that they would just be a permanent boost to your movement capabilities. Since a horse without stamina can still move, you could bring it back to base even if it runs out. The main problem with this idea is that it would mean that you actually have to go back to base after every trip, which would be quite a pain to deal with, unless you allow for hearth to be used with the horse.

Beyond all of this, there are also possibilities with breeding. I don't think speed should be a stat that could be increased with breeding, but stamina and recovery time might be a good choice for stats, along with the usual meat quality and quantity.

It'd have to have some decent explanation though. Perhaps a system where UA does blunt damage through armor, but it sounds better to say it's shp damage mostly with some bruise type hhp damage. If we ever get less pointy weapons they could be impact, spears would be full piercing and swords part piercing part impact. Plate would be vulnerable to blunt, or would get imbalanced when hit with blunt, and resistant to piercing, half efficient to impact (broken bones/ limbs and such)

Leather armor types would instead be resistant to blunt, absorbing blows , be half efficient against piercing as it slows the blade down, and since it requires flexibility be most vulnerable to impact. Light armor if ever added could be efficient against impact
As it'd allow for quicker dodging, weak for piecing, and half efficient towards blunt.

oh yes i remember you telling us how you got 3 hands.

There are a large variety of spears from javelins and darts to the big two-handed 6m pikes that have to be braced into the dirt because a pikeman can't hold it up properly with just two hands (not to mention the impact of a thousand pounds of horse, rider, and armor moving at about 30-40 kmph).

Would be nice if you could swap between one and two handed use as was typical with mid-sized (1.5 - 2m) spears.

Yes! And make the shield on your back deflect arrows/spears when your back is to the opponent :P
