i've managed to catch a single mallard before with a rowboat because it was ever so slightly slower

Mallards definitely have variable speed. Squirrels, in my experience, do as well.

One swan I could outrun easily, the other one kept pace up to me with exactly the same movement speed, first one didn't flee near death, second one started to fly away after getting hit for 13 hp.

I didn't notice variable speed with any animals other than rabbits, haven't hunted swans yet.

You haven't seen any super fast ants or anything? They're really common. Happens with every animal it seems.

Has anybody found strawberries yet? I haven't found them. They're a forageable, not a windsown right?

Swans on average weigh more than a fox and about the same as a badger.
