you need two torches to see in mine

or hearthfires, campfires, minehelms

build a different lightsource

one torch will only let you see yourself in a mine

I have this same problem on a different computer/monitor I have here. It's a CRT with the brightness and contrast both maxed out, but I see complete and utter blackness.

For the record, the pickaxe is two-handed, so you can't do any mining even with one torch. You really need campfires or a miner's helm (I haven't tried a candelabrum yet).

Edit: It occurs to me the stone axe is one-handed, and thus compatible with a torch. Shows how used to the pick-axe I am these days.

This game gets very, very dark. I had to boost my gamma to be able to see at ALL in a mine without maxing my monitor's brightness. Night is still a problem, though.
