Cheese Bug?

I am not sure if this counts as a bug, or if it is intended behaviour.
Curd placed in a mansion cellar yields Cellar Cheddar (as expected), but Cellar Cheddar yields Generic Gouda when placed in both the mansion ground floor and attic (not expected; Cellar Cheddar in Cabin gives Brodgar Blue).
Is this all buggy behaviour from JnL forgetting to add most of the mansion to the cheese table, is it how it is intended to be, or have my Master of Cheeses simply been laxing on the hygiene front?
No matter what, I am still stuck with 5 full cabinets of Gouda.

That sounds quite weird; Cellar Cheddar in a mansion above ground should indeed turn into Brodgar Blue. Could check on that hygiene issue with your Master of Cheeses? :)

Another question on a related topic: Is it intended that Cellar Chedder put into a cave turns into Generic Gouda instead of Cave Cheddar? Every other cheese I put into a cave has changed just like it would have in a mine.

I've noticed a problem in the mansion too. I had put 10 Cellar Cheddars in the second floor. 7 of them became Brodgar Blue Cheese, the remaining three trasformed into gouda.

THis isn't to do with the mansion. It seems random that one gets BBC or GG. Mansion or cabin alike. I always just use outside as it is %100 BBC.

Hmm, I always age cheddar in cabin, and I never got gouda from it.

I just aged 32 racks of cellar cheddar in mansion - attic and ground floor - of those only one rack turned into brodgar blue, the rest into gouda.
