On Holly Friday people dont eat meat and more stuff I dont remember. People tend to go out making use of theese free days.

Christ was probably born in spring, so Shubla is right. The sheperds apparently were not gallivanting around midwinter.
Also the constallation or the "star" the "wise" men were following most likely was visible in spring.
The choice of christmass as a holy day most likely was to compete with the winter solistice celebration of the heathens.
