Not possible. The intention is for ernime to be good. Quality 20 is not good.

All creatures have a base quality, and most creatures you kill will have that quality, with exceptions when you're in a quality node for that animal. For example, most bats are q15, but they can go at least well above q50 (I think I've seen >q60 too but not 100% sure).

sooos.. half of winter is over. Almost everything is covered in snow, haven is Wolf country now and i havent even seen a single one of those little, white furred snow critters. Is there even anything good to craft out of their fur?

winter could be the season of a https://en.wikipedia.org/wiki/White_Fang gameplay with traps to catch those winter animals, but not yet.
