Without them, no matter what content is implemented, there will always be a point after which said content will become trivial. With stat caps, there will be a fix line after which you reach "endgame", and content scaled around that will always be a challenge, completing it will be dependent on your skill (and potential bugaboose, lel), not your stats. If there are no stat caps, people can cry all they want about nonexistant endgame content, it won't happen without capping stats.
