When an animal is at the edge of a cliff, it will not pathfind around it and instead will run straight into the cliff (Please ensure there's enough of an edge otherwise the animal will circumvent the cliff and go straight for you!). Use this time to load up a bow and shoot at it 'til you finally hit it.

The animal will immediately begin to run away (Well, most, since the health is easily a large portion)
Your job is to now walk towards the animal until it stops sprinting and begins walking (You will have to let it leave minimap range before this happens)
Eventually, it will stop running at full speed from you. Take this time to slowly approach it, and get ready to start beating it! You want your combat deck to be fully offensive (Preferably your highest damaging attacks), as the animal will NOT attack you as long as it's in 'flee' mode. Which takes a long time before it forgets you.

Now, just aggro the animal and proceed to spam offensive measures. As long as you're close enough (Boars run at 2.5 speed) you can attack freely (And it doesn't make you stop moving!)
-I'll include pictures next time, and a short video. I lost my boar while typing this

Take breaks once you run out of stamina, carry lots of cups for refilling stamina. Make sure you deaggro (Select the crossed swords next to the creature's icon at the top right of your screen) so it doesn't run -too- far.
Happy hunting!
Disclaimer: May or may nor work with deers, dependant on their speed. More than likely does not work with bears.
Animal health values/Reccomended UA to fight (Reccomended means, how much UA you'll have so a single attack from that animals does not damage you with an appropriate defensive move, 1:1)
Health is variable per animal, given values are just confirmed values and you should never expect it to die at a given number. This seems to be based on regions and quality nodes.
Speed is also variable within animals to a lesser degree, be wary.

Quips about Marksman Levels:
MM can truly be any level to hunt, but the higher level, the higher relative archery for any of these animals. It's the difference between wasting one arrow, or wasting twenty. In general 5mm will let you hit after 1-3 shots, 10mm will help you hit in 1 or two.
Bow quality also heavily impacts damage and accuracy - you should hunt with a 10ql bow at very minimum. Arrows also impact damage, a ql 14 bone arrow and ql12 bow will deal around 200 damage, whereas a ql 6 bow with ql 10 stone arrows will deal 150 damage (Stone is better than bone normally, but since it's easier to get higher quality bone arrows currently, it is preferred)
