If in the way you defined it? I doubt one would get very far.

If defined as only eating plants, but able to wear hides and process bones, then that might be doable.

Oh look, my time to shine.
I've been living vegan life as an experiment.
Here's my progress so far in an image:

I see veganism like this:
No anthill or beehive raiding. I use insects as curios though, because I don't know what happens to them after, maybe the character lets them free? :D
All animal products (hides, fish, bones) I've been able to find somewhere and use them. I like to see this as a "roadkill". Otherwise they would just go to waste.
Milk, wool I've gathered from mouflons and aurochs just by giving them clovers. Nothing special.
If I see a fox genociding a flock of chicken I just collect them afterwards, dunno what to think of this; should I leave them as "eaten by fox" or are they there for anyone to use?

Yeah, this is my gaming so far.
1-2 Months ago there were far more dead animals laying around. Nowadays all I find is just bones left. Hard days it seems. Luckily I got some leather to build the pali and still a bit for other use in cupboards saved.
