I'll note that decay is granular--it hits a specific integrals of the tile, not the entire tile (I believe loftar stated that each tile is 11x11 integrals). From experience, mulberry trees are extremely slow to regrow items--had one tree over a month before it got new mulberries--whereas firs were extremely fast, about once a week or so. What's the difference? Size of their hitbox. A fir has a hitbox slightly larger than a tile, a mulberry tree takes up only about a quarter of a tile.
