I just started, learned a bunch of skills including..
Carpentry, Farming,Fishing,Foraging,Hearth Magic,Hunting,Lumberjacking,Oral Tradition,Pottery,Primitive Tools,Stone Working, and Wilderness Survival

Although I have all those skills, the only options I have to build are a fireplace, kiln, tar kiln, Roundpole fence, Wicker Basket, Quern, and Runestone.

It seems like I should have more building options... Where are the buckets as my stamina regen is killing me..

Catch a rabbit, skin and butcher it, you get a bone. Pick a bough, and with this you can make a bone saw. Chop down a tree, make a block, cut a board, and you get a ton of stuff unlocked with those skills. Repeat for anything new you can craft, process, or otherwise find.

Yes, if you havent "discovered" the right materials for said recipees, then you won't know them. Quite logical really ^^
For buckets you need to acquire planks - which you get through a saw. (Which you need to kill bunnies / chickens /anyotheranimal for)
