I asked Jorb about this but I want to know if anyone could confirm, if you have farmland on an elevation and you do leveling does this affect the crop in any way?

But their quality/growing speed might be affected. But i highly doubt that.

which is what I want to know before moving my farm because I need to move about 15k units of dirt and was curio if digging/teraforming while the crops are planted would affect them, not necessarily if they'd be okay on sloped ground

nah, it's fine. it doesn't effect them. it just magically raises or lowers the ground under them.
