Get a shield, highest q possible preferably at least over q10. It will block most of the damage if you keep openings low.
Best methods to hunt right now are caves and horses. Bats are a good target since they're plentiful, easy to kill and easy to chase, and near cave entrances so you can go out to lower openings and then go back in. No need for a horse for them.
Try to aim for 30 str/agi and 20 ua. Those numbers are just off the top of my head and will vary as you hunt new stuff. Ua is easily buffable with gear too. Beast rings buff the other stats, can't get them from chicken bones now but turtles and moles are both good options.
Don't tunnel vision yourself on not being able to hunt bigger game for now, squirrels turn to leather all the same and in the right places you can find as many bats as you have time to kill. It won't matter until you reach sausage making, which will take more time this world since hard metals take more time now.
The hardest nerf to early world hunting was giving boars 15 points of undestructible damage reduction, since those were the easiest to chase animal. Foxes are pretty fast but you can catch with half of a horse's pony power. Badgers are doable on foot with just a cave. Catch more squirrels you won't regret it.
Do not hunt snakes without a shield (and I'm unsure about with one). Just 1 point of damage can reduce 15 str for a day which at your range will render you unable to do combat, and if you get a few bites you could die within that time.
