When should I harvest plants

How to check whether plants are in the final phase and it's safe to harvest them? I'm using Amber btw.

Number is different depending on plant. You need to memorize in your head.

I don't have all crops, but so far from the crops I've seen only "carrot" can be harvested at multiple stages.

Beetroot also gets a second stage, but not sure if you really need to care (it gives leaves)

not sure if it has an extra stage, but the penultimate stage of hemp gives a hemp bud rather than seeds and fibre.

I don't recall being able to harvest beets early, and believe me I've tried because it has taken me a while to get used to the new visuals.

Hemp can be harvested at 2 stages, too, don't forget: for buds for drying and smoking and then for seeds and fibers.

Then what is the point of having the numbers if you still need to figure it all out? It's just as easy as learning "only the big carrots" or "when there isn't a bud on the hemp plant".
