Newbie questions about wine and vinegar

Do a grapejuice converting to wine in: barrels, buckets, demijorns?
Do a wine converting to vinegar in: barrels, buckets, demijorns?

I'm a little confused.

grape juice will turn in to wine when left in a barrel and if left in any other container but a demijohn the wine will turn into vinegar

I can confirm that what has happened to me. I dont get any wine from a barrel. (dunno about buckets)

Turns to Wine in Demijohn
Turns to Stale Grapejuice in Extraction Press or Bucket

Wine:
Turns to Vinegar in Demijohn
Suspect stays as Wine in barrel
Suspect turns to Vinegar in bucket

Stale Grapejuice:
Turns to Vinegar in Bucket or Demijohn
Suspect stays as Stale Grapejuice in Barrel
Suspect turns to Vinegar in extraction press.

No idea what happens if you press fresh grapejuice into an extraction press with stale grapejuice.
